    These vegan tempeh meatballs provide the perfect texture with a crisp outer layer and soft, savory center. Plus, they are easy to make with a few simple ingredients. Add them to your favorite pasta dish, sub, or sandwich. I like to use homemade pasta sauce for classic spaghetti and meatballs.

    The compact consistency of tempeh is the perfect plant-based protein for this dish as it holds together nicely. Chia seed eggs give it even more protein and calcium, making these the healthiest meatballs you’ve ever eaten. Italian spices like oregano, parsley, basil, and thyme give it an authentic taste. You can use them all or pick your favorite to cater to your taste.

    Adding some panko bread crumbs and cashew Parmesan cheese give it an extra crispy texture.

    Instructions
    1. Prepare the chia egg by mixing water with chia seeds and set aside.
    2. Preheat your oven to 375c.
    3. Chop the onion and garlic and place in a frying pan on medium heat with 1/2 tbsp of olive oil. Saute until translucent or begin to brown. (Which ever is your preference.) Set them aside.
    4. Chop the tempeh into manageable pieces and add to your blender or food processor. Pulse to break it into tiny pieces.
    5. Add your italian spices, garlic and onion mix, breadcrumbs, chia egg, pasta sauce and Parmesan cheese if you have it.
    6. Mix until it forms a dough that when molded stays in place. You can add your salt and pepper to taste as you mix.
    7. Once mixed, use a spoon to shape into meatballs. You can make them what ever size you'd like. For subs, smaller meatballs may work better.
    8. Put more oil in your frying pan to cover the entire surface. Place the meatballs in the pan once the oil is hot. Cook for about 5-6 minutes, flipping the meatballs halfway through.
    9. Place them on a baking sheet and cook in the oven for 15 minutes, turning once in between. You may cook them for a little long for extra crisp.
    10. Prepare your pasta and sauce or bread for a sub while your meatballs cook.
    11. Top your dish with your cooked meatballs. Add some fresh parsley, additional vegan cheese, or more Italian spices as desired.
